There is a right tool for the job and it is important to have what you need for safety too. We live on a lake and as you can imagine, we catch a lot of fish. It's a little hard to clean fish with the wrong knife so we have a variety of cutlery in our outdoor kitchen and boathouse. Fillet knives are great for getting off the bones and leaving the right amount of fish behind. Most filet knives have six-inch blades and high carbon steel. These knives are razor sharp and will accomplish cleaning most lake fish with ease. A fillet knife should not be stiff and light weight in the hand. Make sure the handle of the knife is soft and slip resistant for maximum control. When stocking your outdoor kitchen, keep the steak knives close at hand because you are probably doing a lot of grilling. If you have ample cupboard space, you can have high quality knives outdoors as long as they are protected from the elements. For safety purposes, you may want to have a locked cabinet for your knives. Having a well stocked outdoor kitchen is necessary if you don't want to run back and forth to the indoor kitchen. It's also nice to have utensils, dishes, pots and pans etc. that are just for the outdoors. It's hassle free and less stress entertaining when you know where everything is at your fingertips. I have a little caddy that all of my outdoor utensils go into after washing because I don't have an outdoor sink. I always know where they are and it is easy to cart them inside and out after washing. Do yourself a favor and have the correct knife for cleaning your fish or any other meat outdoors.
