Kitchen Shears: A Neat Little Tool
Kitchen shears are similar to common scissors. The chief difference between
scissors and kitchen shear, shears is where the pivot is situated. Your
Henckels shears have the pivot situated farther from the handles to give you
more leverage and thus more cutting power. High quality shears like
Calphalon and Wusthof can slice through the breastbone of a chicken with no
trouble. We don’t often need Anolon or NapaStyle shears, with the convenience of
supermarkets providing chicken parts. Precut chicken parts, however, are
often not uniform in shape and size, thus affecting the quality of your food
presentation. They also contain bits of shattered bone, and are not as cheap
as buying a whole chicken. To cut up a chicken all you really need is a
